• 1 lb pork tenderloin
  • 1 tsp salt
  • 1/2 tsp Aleppo pepper
  • 1/2 tsp Za’atar


  • Preheat oven to 325 degrees
  • Preheat case iron pan over medium-high heat.
  • When pan is hot, add neutral flavored oil to coat the pan, and sear the tenderloin on all sides. About 3 minutes each side. Try not to let the pan get so hot that the oil smokes.
  • Once browned on all sides, move to oven and cook until probe thermometer reads 145 degrees.
  • Rest covered in foil for 5-10 minutes.
